Having been brought up in a very large Italian family on his father’s side and Irish family from his mother’s side, every mealtime was a catering event; the love for fine food and drink was instilled at an early age.  Therefore becoming a Chef became a natural choice of career.

He spent a couple of years of full-time college studies gaining general professional City & Guilds qualifications including a stint in France.

After college John-Paul cut his teeth working in the immensely busy west end of London’s Theatre-land at the world famous Seafood Restaurant and Oyster Bar, Bentleys of Piccadilly.  Many actors and celebrities such as the Rolling Stones, Sir John Gielgud and even Dame Edna Everidge were regulars.

He then began working his way up the career ladder in the Kensington Close hotel, from where from here was transferred to Bermuda, living and travelling the Caribbean for four & a half years in luxury hotels.

After this he returned to London for a couple of years to the Hotel Russell in Bloomsbury which hosted many politicians & dignitaries including Princess Anne. Then followed a couple of years in Spain as Head Chef of the prestigious La Reserva de Marbella hotel & restaurant complex.

John-Paul then moved to Edinburgh where he worked as Executive Chef at the Apex International Hotel situated in the Grassmarket, with its stunning Castle views. Its rooftop restaurant, Heights, won 2 Rosettes.

John-Paul also headed up the Metro brasserie, where he created menus that reflected the cool design and interiors which adhered to the principles of funky, flavoursome, entertaining food. Simultaneously John-Paul was also Executive Chef at the Apex City Hotel which housed Agua Modern Seafood Restaurant where he also won 1 Rosette.    

A move to Melbourne with his family was next.

John-Paul was Executive Chef at Melbourne`s Amora Riverwalk Hotel for 8 years. He then took up the position of Head Chef at Romano`s by the Harbour set on the beautiful Patterson Lakes where he brings his wealth of worldy food knowledge to light.



Vanessa has always believed in welcoming customers as if she was welcoming them to her home... The greatest enjoyment she gets from her work is knowing she’s made every effort to make people feel at home. Her attention to every detail has contributed to a positive dining experience with us.

Working in hospitality for twenty years has shaped who Vanessa is today... She’s still loving everything about what she does for a living which is very important.

The experiences Vanessa has had in this hospitality have led her to where she is today and she couldn’t be happier!
